Baked Fish Masala
Fancy a taste of African cuisine? Try this tasty masala fish recipe!
Ingredients
1 whole fish per person (for the full African experience, leave head & tail on!)
1 leek
Coating for the fish
1 teaspoon medium curry powder
2 tablespoon fish masala powder
1/2 teaspoon garlic powder
1/4 teaspoon tumeric powder
1/2 teaspoon dried coriander
3 tablespoons light soya sauce
Instructions
1) Clean the fish.
2) Wash & chop the leek. Place inside the belly of the fish.
3) Mix all the ingredients for the coating together and smear all over the fish.
4) Preheat oven to electric 210 °C or gas mark 8 and place a large oven proof dish or metal tray in it with 300ml of good cooking oil, to get hot.
6) When oil is hot enough, carefully place the fish into the oil. Cook for 45 - 60 minutes.
7) Serve with chips or salad.
