BAKED LEMON AND VANILLA BEAN CHEESECAKE

A Burgh Island Hotel speciality - thanks to Conor Heneghan!

Ingredients  
250grms Digestive biscuits 1 Vanilla bean (pod)
90grms Melted butter 3 Beaten eggs
500grms Mascarpone cream cheese 165ml Double cream
250grms Castor sugar 1 Lemon - zested and juiced

Instructions

  1. To make vanilla cream - warm cream and scrape the vanilla bean into the cream and let it infuse. Let it cool and remove the scraped bean.
  2. Blend biscuits and melted butter and put into a lined baking / cheese cake tin.
  3. Beat sugar with mascarpone cheese till thick and creamy.
  4. Add in beaten eggs; slowly pour in vanilla cream.
  5. Slowly whisk in lemon juice and zest, and pour over the biscuit base.
  6. Cook at 150°C for 90 minutes, then turn off the oven, and leave for a further 15 minutes. Serve cool.
